Baked Chicken Strips
- 2 tsp. olive oil
- 8 Tbs. whole wheat seasoned bread crumbs
- 2 Tbs. grated parmesan cheese
- 2 large chicken breasts, cut into strips
- Nonstick cooking spray
Preheat oven to 425 degrees. Spray cookie sheet with nonstick cooking spray. Place olive oil in a bowl and breadcrumbs and parmesan cheese in another bowl. Season chicken with salt and pepper. Place chicken in bowl with olive oil and mix well. Put chicken in bowl with breadcrumbs and parmesan cheese and coat evenly. Place coated chicken strips on baking sheet.
Bake for 8-10 minutes. Turn chicken over and cook for an additional 4-5 minutes or until cooked through.
Serve as an appetizer with cut veggies and low-fat ranch dressing. Or, serve as a main dish with a salad or your favorite vegetable!
