Black Bean, Edamame and Wheat Berry Salad

Ingredients
  • 4 cups water
  • 1 cup frozen edamame, shelled (thawed)
  • 1 cup tomatoes, chopped
  • ½ cup red onion, finely chopped
  • 3 Tbs. olive oil
  • 2 Tbs. red wine vinegar
  • Salt- to taste
  • Pepper- to taste
  • ½ cup wheat berries
  • 1 cup black beans (cooked or canned)

Serves: 6

Combine water and wheat berries in a saucepan and bring to a boil. Reduce heat, cover and simmer for 45 minutes or until wheat berries are tender. Place in strainer and run cold water over the wheat berries to cool and drain. Combine wheat berries with remaining ingredients in a bowl. Serve immediately or cover and refrigerate up to 8 hours in advance.

Note: Never cooked with wheat berries before? They are the whole grain form of wheat - the whole complete grain before it has undergone any processing. They're a high-fiber whole grain that can be used much like any other whole grain. Look for them where you find other whole grains in your local supermarket, or check the organic or natural foods sections.
