Lightened Up Egg Nog
Ingredients
- 1 1/2 cups fat-free half-and-half
- 1 cup egg substitute
- 1 cup fat-free/sugar-free vanilla ice cream
- ½ tsp powdered Stevia
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon rum extract
Serves: 8 (1/2 cup servings)
Combine all ingredients in a blender. Blend for one minute or until all ingredients are well mixed. Serve immediately or refrigerate until ready to serve.
Optional: garnish with a small amount of fat-free whipped topping and a sprinkle of nutmeg.
