Oven Roasted Sweet Potatoes

Oven Roasted Sweet Potatoes

  • 3 lbs large diced sweet potato
  • 1/4 cup olive oil
  • 1 tbsp salt
  • 1/2 tsp ground black pepper
  • 2 tbsp honey
  • 1/4 red onion diced

Serves: 10-12

Toss all ingredients in a bowl until spices and onions are thoroughly mixed within the sweet potatoes, lay out on "cookie sheet" or sheet pan with parchment or foil liner. In a pre-heated oven (325 Degree F) place sheetpan with all ingredients, roast for 30-35 minutes or until sweet potato pieces are slightly softened and have ample coloration. Toss ingredients in a bowl or serving dish again, cover loosely, allow seasonings to "meld in" to sweet potatoes or about 5 minutes. Serve while still hot.
