Pear and Pomegranate Salad
Ingredients
- 2 pears cut into thin matchstick-size pieces (one Bartlett and one Asian pear, if possible)
- 1 apple, cut into thin matchstick-size pieces
- 1 cup pomegranate arils
- 1 rib celery, cut into thin slices
- 3 oz. Havarti cheese
- 1 Tbsp. honey
- 2 tsp. canola oil
- 1 orange, juiced and zested
- 3 Tbsp. pecan pieces, toasted
Serves: 7
Mix pears and apple, pomegranate, celery and cheese in medium bowl. Stir honey, oil, juice and zest in a small bowl until blended, pour over salad and toss gently to coat. Sprinkle with pecans, serve immediately.
Cook's Tip: Toast the pecans in a medium-hot saute pan. Stirring frequently for 2-3 minutes.
