Pear and Pomegranate Salad

Ingredients
  • 2 pears cut into thin matchstick-size pieces (one Bartlett and one Asian pear, if possible)
  • 1 apple, cut into thin matchstick-size pieces
  • 1 cup pomegranate arils
  • 1 rib celery, cut into thin slices
  • 3 oz. Havarti cheese
  • 1 Tbsp. honey
  • 2 tsp. canola oil
  • 1 orange, juiced and zested
  • 3 Tbsp. pecan pieces, toasted

Serves: 7

Mix pears and apple, pomegranate, celery and cheese in medium bowl. Stir honey, oil, juice and zest in a small bowl until blended, pour over salad and toss gently to coat. Sprinkle with pecans, serve immediately. 

Cook's Tip: Toast the pecans in a medium-hot saute pan. Stirring frequently for 2-3 minutes.
