Red Sea Soup
Ingredients
- 2 Tbsp. unsalted butter
- 1 medium onion, diced
- 2-3 carrots, diced
- 3 stalks celery, diced
- 3 garlic cloves, minced
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. paprika
- 1 lb. tomatoes, diced
- 1 cup red lentils
- Salt and pepper, to taste
Serves: 8
In a large pot, melt the butter. Add onion, carrots, celery and garlic and cook over medium heat, stirring until softened. Add cumin, coriander, paprika and cook about 3 minutes. Add tomatoes and cook until just softened. Add lentils and 8 cups of water. Simmer over medium-low heat until the lentils are very soft, about 30 minutes. Add salt and pepper to taste. Puree in a blender and enjoy!
