Tomato Salsa
Ingredients
- 4 cups diced tomatoes (about 5 medium tomatoes)
- 3/4 cup finely diced red onion
- 1/4 cup red wine vinegar
- 1 or 2 jalapenos (depending on your preference), seeded and minced
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon salt
- Cayenne pepper - just a pinch...or more to taste!
- Fresh squeezed lime juice, optional, to taste
Serves: Serving Size: 1/2 Cup (approximately 10 servings)
Combine tomatoes, onion, vinegar, jalapeno, cilantro, salt and cayenne in a medium bowl. Refrigerate until ready to serve.
You can cover the salsa and refrigerate for up to 3 days.
Serve with baked tortilla chips, sliced veggies or use as a topper for salads, potatoes, eggs and more!
