Trimmed Down Gingerbread

Ingredients
  • 2 cups white whole-wheat flour
  • 2 tsp. ground ginger
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 3/4 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup plain 2% Greek yogurt
  • 1/3 cup molasses
  • 1 large egg

Serves: 20

Preheat oven to 350 degrees. To prepare cookies, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, ginger, soda, powder, cinnamon, nutmeg and slat, stirring mixture well with a whisk. Place brown sugar, butter and Greek yogurt in a mixer and beat at medium speed for two minutes or until ight and fluffy. Add molasses and egg and beat one minute or until well combined. Add flour mixture and beat on low one minute or just until combined. Gently press mixture into a disc and wrap with plastic. Chill for 30 minutes. Divide dough in half. Roll each dough portion into a 1/8 inch thickness on a lightly floured surface; cut with cookie cutters to desired shapes. Place cookies one inch apart on cookie sheets covered with parchment paper. Bake 7-8 minutes or until cookies are lightly browned. Let cool on a baking sheet for 5 minutes. Enjoy!
