Cauliflower Mash

Cauliflower Mash

  • 1/2 head of cauliflower, broken into florets
  • 2 small or 1 large potato, peeled and cut into pieces (can also use 1-2 parsnips)
  • 3 Tbsp. plain Greek yogurt
  • 1 Tbsp. unsalted butter,
  • 1-2 cloves galirc
  • salt and pepper, to taste

Serves: 4

Place cauliflower florets and potato pieces in a large suacepan, add water to cover completely. Bring to a boil over high heat. Boil for 15-30 minutes, or until fork tender. Drain. Return to pan and heat ot help dry out the mixture. Add yogurt, butter, garlic and salt and pepper to a mixing bowl. Add in cauliflower and potatoes. Mix using a hand mixer until smooth.
