Eggnog Protein Bites

Eggnog Protein Bites

Ingredients
  • 1 3/4 cups gluten-free quick oats (can use any rolled oats, quick oats or oat flour)
  • 1/4 cup coconut flour 
  • 1 scoop vanilla protein powder
  • 1-2 T coconut palm sugar (start with 1 and add to taste; can use any granulated sweetener)
  • pinch sea salt
  • pinch nutmeg
  • 1/4 cup peanut butter or any nut butter
  • 1/4 cup honey or any
  • 1/4 cup + Light or Dairy-Free Eggnog of choice

Optional: a little extra coconut palm sugar or other granulated sweetener to coat.

Serves: 12+ bites (depending on size)

Mix dry ingredients in a large bowl. In a separate, microwave safe bowl, combine peanut butter and honey heat slightly until ingredients combine (start with 20-30 seconds). Pour peanut butter mixture into dry ingredients. Mix well. Add egg nog and mix to form thick batter. If it is too thick, add small amount of egg nog. If too thin, add a dash of coconut flour. Form into bite-sized balls. Option: roll balls in the extra sugar. Place on a baking tray or plate lined with parchment paper. Refrigerate at least 10 minutes so they are firm.
