Lighter Tuna Casserole

Ingredients
  • Canola oil or olive oil cooking spray
  • 6 cups fettuccine, cooked (option: use whole wheat pasta)
  • 2 (6-ounce) cans solid white tuna packed in water, drained and broken into small chunks
  • 1 cup chopped celery
  • ½ cup chopped green onions
  • ½ cup peas  (or more if desired)
  • 1 cup shredded reduced-fat sharp cheddar cheese
  • ½ cup plus 2 tablespoons fat-free sour cream
  • ¼ cup light mayonnaise
  • 2 teaspoons prepared mustard
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • 1 large tomato, chopped

Serves: Serves 8

Preheat the oven to 350°F. Coat a 2-quart casserole dish with the cooking spray.

In a large mixing bowl, toss together the cooked noodles, tuna, celery, green onions, and peas. Stir in half of the shredded cheese, and the sour cream, mayonnaise, and mustard. Season with thyme and salt.

Spoon mixture into the prepared dish and sprinkle the top with the remaining cheese. Bake for 30 minutes.

Sprinkle the tomatoes over the top before serving.
