Baked Fish Packets

Ingredients

1 lb white fish 

1 tbsp olive

1/2 onion sliced

2 tomatoes sliced

1/4 teaspoon salt

1/2 tsp crushed red pepper flakes or ground black pepper

Serves: 4

1. Preheat the oven to 450 degrees.

2. Cut fish into 4 equal pieces.

3. Place each piece of fish on a piece of aluminum foil that is big enough to fold tightly over the fish.

4. Drizzle the oil over each of the fish pieces and then sprinkle the salt and pepper over all of the pieces.

5. Top the pieces with the onion, garlic, and tomatoes. Fold the aluminum foil over and roll the edges so that the fish and vegetables are sealed in.

6. Place the packets on a baking sheet and bake for 15 minutes, or until the fish flakes easily. Serve with a lemon wedge on the side, if desired.
