Pumpkin Yogurt Sauce
Ingredients
- 1 1/4 cups plain nonfat yogurt (without stabilizers)
- 1/2 cup cooked, mashed pumpkin or canned pumpkin
- 1/3 cup apple cider
- 1 - 4 tablespoons maple syrup (depending on how sweet you want the sauce)
- 2 teaspoons pumpkin pie spice
- 1/8 teaspoon salt
Serves: 14
For the sauce, combine all the ingredients in a saucepan and whisk until smooth. Before serving, stir over low heat to warm gently--don't let it boil. Serve on Walnut Whole Wheat Pancakes.
